Rum and chocolate pairings

Pairing rum and chocolate is an art , and as such it should not be taken lightly. The risk, instead of highlighting the respective flavors, is to ruin them, or to cover one in favor of the other.

For this reason, especially when dealing with high-quality products, it is better not to proceed blindly. Here are five rum and chocolate pairings recommended by us, based on the most interesting chocolates created by Enrico Rizzi in his artisan laboratory in via Correnti 5 in Milan and on a series of fine rums.

El Dorado 21 & Porcelana Venezuela 72%

To accompany this remarkable rum, which can boast the honour of having received the highest score ever awarded by the Beverage Tasting Institute of Chicago (98 out of 100), we propose a truly premium pairing with the very rare single origin Porcelana Venezuela 72% , with a fine roundness and sweetness and aromatic notes of bread crust that pair well with the spicy character of the rum in question.

Abuelo Centuria & South Cotabato Philippines 66%

For a fine and velvety rum, we recommend a balanced and high-quality single-origin chocolate such as the South Cotabato Philippines 66% single-origin - with aromatic notes of tropical fruits, honey and cereals - for a meditative and refined tasting experience.

Zacapa XO & Los Rios Ecuador 73%

A sweet rum, with hints of caramel and vanilla, but also of nuts, which finds an interesting counterpart in the single-origin Los Rios Ecuador 73% bar, tannic, with notes of red port and toasted cocoa. The result? An explosion of flavors.

Diplomatic Ambassador & TumacoColombia 85%

For the penultimate pairing with chocolate, we choose an intense rum, with a strong hint of tobacco. Coming from Venezuela, it pairs well with the intense Tumaco Colombia 85% single-origin dark chocolate, bitter (although with sweet tones) and with strong notes of cocoa.

Kraken Black Spiced & Cocoa Mass Ecuador 100%

As the name suggests, this rum (perhaps less refined than the previous ones, but very particular) is already a concentrate of spices: there are 11 of them, including cinnamon and cloves. So there is no need to further load its pungent character. Better instead to combine it with some pure cocoa mass El Cibao Dominican Republic 100% , whose intense aroma will be significantly enriched.
