To do the pastry chef , in some respects, is very similar to conducting an orchestra : it is, in essence, a matter of harmonizing the various ingredients/instruments at one's disposal, to create a cohesive and pleasant whole, of greater value than the sum of the individual components used for its creation.

For this reason, imagining himself a bit like a "composer/pastry chef", Henry Rizzi he renamed his sweet creations Symphonies . Each of his recipes, in fact, orchestrates and harmonizes different ingredients in an original composition.

The Symphonies by Enrico Rizzi in some cases they are inspired by “classic” combinations, such as the combination of violet and liquorice in the Senateur Symphony, but they always add a personal touch . In other cases, however, they put together apparently distant ingredients, in a unusual, if not unique, combination (as in the case of the caramel, cocoa beans and Maldon salt in the Sinfonia dei Golosi).

Once a Symphony has been “composed”, Enrico applies it in a transversal way to all its pastry creations , from macarons to chocolate pralines, through ice creams, biscuits and plum cakes. In this way, for example, it is possible to find in its boutiques both pralines, macarons, ice creams and sablés in the Sinfonia Rosé version (lychee, raspberry and rose oil).
