“Gianduia” is a type of chocolate mixture created in Turin in 1806 by ingenious Turin chocolatiers who, during the Napoleonic blockade, replaced the now very expensive cocoa with the Tonda Gentile hazelnut from the Langhe.

The Great Classics, available in four creations, represent the maximum expression of the classicism of some excellent raw materials: from the Sicilian pistachio Feudo San Biagio to the almond of Noto and the Piedmont hazelnut, in addition to the extradark version based on single-origin Colombia 85% chocolate.

Enrico Rizzi's Symphonies are sometimes inspired by "classic" combinations, such as the combination of almonds and candied citrus fruits in the Sinfonia di Sicilia, but they always add a personal touch. In other cases, however, they bring together ingredients that are apparently distant, in an unusual, if not unique, combination, as in the case of caramel, cocoa beans and Maldon salt in the Sinfonia dei Golosi.
