The cocoa beans from which Enrico Rizzi creates this dark chocolate come from Tumaco , a region of Colombia that borders Ecuador. Here, farmers grow their cocoa plants, taking care to maintain a high level of genetic variety, which contributes to the complex aromatic bouquet of local chocolate.
