Unlike milk chocolate, which has a creamier texture due to the addition of milk powder, dark chocolate offers a more intense, less sweet flavor. Its aromatic profile can vary significantly depending on the cocoa percentage, the type of cocoa beans used, and the processing methods.

From a regulatory perspective, to be classified as "dark," chocolate must contain at least 35% cocoa solids, as specified by Legislative Decree 178 of June 12, 2003, enacted in compliance with European Directive 2000/36/EC of June 23, 2000. To be labeled as "extra dark," it must contain no less than 43% total cocoa solids, with at least 26% cocoa butter.

Different Typoes of Dark Chocolate

Dark chocolate can be classified into different categories based on the percentage of cocoa in the recipe.

1. Up to 60% of Cocoa

This category strikes a balance between sweetness and cocoa intensity. It has a smooth texture and a more approachable flavor compared to higher percentages. It's perfect for those looking to explore the world of dark chocolate without giving up a touch of sweetness.

2. 70% of Cocoa

One of the most common and beloved percentages, 70% dark chocolate is known for its rich and bold flavor. It is often used in pastry making and for pure tasting experiences.

3. Extra Dark (up to 85-90%)

With a minimal amount of sugar, extra-dark chocolate is beloved by connoisseurs for its exceptional intensity.

4. Up to 99-100% of Cocoa

This is dark chocolate in its purest form, also known as cocoa mass (100%). It contains only cocoa paste and, in some cases, a minimal amount of cocoa butter, with no added sugars. The flavor is extremely intense and bitter. It’s not for everyone, but those who appreciate it consider it the pinnacle of quality.

  • Cocoa mass: Obtained by grinding cocoa beans.
  • Cocoa butter: The natural fat of cocoa, which provides creaminess.
